You know I'm just sitting there getting frustrated because you know you hear some of these people on the Patriot broadcast and talking about the I mean, exactly, I think they're helping their world, they're saying the cattle, the beef prices are going up, and only to find out that the meat packers are buying the cattle at a head at a very low price, but jacking up the price at the other end type of thing. And I like to know, can we change the battlefield by going directly to the cattle farmer and buying the cow from there? Always, in fact, here's the thing, little trick, you know, we all lament about the Arabs, but don't worry, The Italians used to be the same way. They used to have a lot of Italian neighbors. Most of the Arabs have been buying all the cheap goats we have out in this neck of the woods. The biggest problem is they're grabbing them. As far as the meat prices go, yeah, you're saving a lot of money by buying it on the hoof. But remember, when we've talked about this, you're buying either a quarter cow, half cow, or a full cow, and you go together on it, you're going to be buying the whole cow. That means the whole cow, holy cow. Yes, you are. you're gonna have to take all of it. You don't take just selected pieces. It's going to be, again, a mix of cuts. That's no problem. It's just understand that when you're buying it, the way you calculate cuts for a premium cut and all of that, well, you're looking at just a utility-based price per pound. So that's a cool thing in and of itself. Then, of course, if you had to put your shop, you'd, you know, chop accordingly. I would go so far as to say nowadays, what a lot of people are doing, and everybody needs to organize better at this, supporting a farmer directly and actually buying into and investing in a cow. I mean, you know, way before it's gonna be butchered. There's a number of different ways you can do that. If you find some farmers that are smart, that are little guys, little guys are being squeezed. Best thing we can do is help them out by healing directly with them. The problem you've got is, and I'm gonna say this, a lot of farmers don't like to butcher their own, their cattle. Doesn't mean there aren't a lot that will, but I know a lot who won't. They'll have the animals shipped out, sell you a cow but they won't do it on site. Now there's others like we dealt with, our family dealt with for years. One of the farmers, he's pretty well retired now, but I've helped a butcher pigs and cows right from, you know, the moment you shoot them right to the point where he's from the inside, nothing goes to waste. Okay, so it's a matter of finding somebody who's either would be willing to do it or is doing it. In some cases it's likely to be willing to, but you need manpower to do it if you're going to butcher a cow. It doesn't mean you can't do it on your own, but there's a little hefting involved there. You usually use either a bucket or a backhoe with a chain. It's usually your best choice for moving the animal. After you shoot it, you cut it, right there. Looking at being able to skin it, be tanning the leather, or at least looking to market the leather. And again, that's one of the biggest problems you've got is Leather is mostly either being destroyed intentionally or the Chinese are getting it. There aren't that many canneries or saddleries that are inside the US anymore. This was a problem 10 years ago and I know it's worse now. There aren't the American boot companies hardly to speak of and that's where leather mostly goes. Everybody goes, well Mark, there's leather coats. Yeah, and take a look where all of them are made. Communist China. Leather, you know, commodity most people aren't thinking about. A good double A cowhide, although I don't like double A, I prefer a B grade hide. B grade hide has character because it has barbed wire marks. You're going to find that down in Texas. Barbed wire marks, scratches and pokes and brand marks. The stuff I look for when I'm doing leather work because you know you add more character, more color. When you do finally color it when you shade it. Anyway, past the leather, the big thing is if you're serious about it, you want to find the cutlery and you want to have several sets of cutlery, not just one. And I know somebody say, well, I got one set and I keep it sharpened out, and sharpened as I go. Well, that sounds cool, but to save time, I've learned to have multiple sets of blades. If you're doing a full cow or if you're doing a whole bunch of animals, one after another, Let's say that you decide to do several stock and you want a bunch of knives on hand and you want a sorting bin and you also want somebody off to the side ready to sharpen and that's all that that person does. Or just have enough blades that you don't have to sharpen so that you can keep everybody working. Because when you start cutting up a cow, you're looking at a lot of pounds of beef that got to be wrapped. You're only going to have so many, you're like, there's only so many hours in the day More people can get to do that, like get the ladies to help out with the wrapping, the final prep and wrapping. The other thing that really is a good idea is to have a refrigerator or freezer off to the side, ideally two of them, because you want to be able to chill, put this stuff in, chill as quick as you can, start storing. It's just a smart move. Typically, again, the butcher areas are already chilled anyway or brought down to temp. and even on the farm. The rancher, the rancher, the farmer that we had here locally we used to go to, entire meat area was no bigger than your regular kitchen, it was fairly small. But that was kept at a chill level constantly while we were working. And again, also make sure basic cleaning, cleanliness, and maintenance are common sense. So there's a couple things you need to look at. You'd be watching for, personally what I'd be doing is watching for stainless steel panels, from either an old wall locker or whatever and making a prep room. And I would exceed specifications as far as cleanly goes. It's not hard to do if you're going to do bulk like that. The cool thing is that most of the guys that my dad knew were, you know, again, people who were in different trades. And we usually had one or two of the guys who were firemen who also had been butchers or actually meat cutting. A little bit more about what to do and how to do it right. a meat saw. If you're going to be doing that, George, you want a good cutlery set. Now you don't have to buy brand new. And when I say cutlery set, I'm not talking about going and buying a Schrade set of skinny knives. We're talking about regular cutlery sets. They have a very simple handle system. They're crude and rude by industry knives, but you'll have all the different, you know, taper cut, the Damascus cut, You'll have all of your little playing knives. You know, they typically have a thing or playing knives. The set usually is five or seven blades. They can be more, but five or seven blades. You can find jobber sets for about $24 to $30 a set. And those will last a lifetime if you take care of them, at least a good long time. Of course, if you were a professional butcher, you'd probably go through a couple of those sets a year. Because you'll bring them right down to half their way with sharpening. You'll take that blade down more than 50%. Over time. The one thing around here I know it's a lot of what they call locker plants for people who go hunting and they bring their gear or... Right, that's where we were talking before. Usually you can bring a pig in like if you had a pig you ought to check on that if you have wild pigs because usually they'll trade you pound for pound if you want to do a sausage and I highly recommend that's one of your best choices to do a sausage, a summer sausage. They'll trade you pound for pound, pig for whatever And it's whatever it seems to be all I can. Sometimes it's beer depending on the season. Sometimes it'll be beef, sometimes it'll be pork. But, you know, Moenel will not pork with wild pig. But, you know, it'll be another stock meat. And they'll usually do a pound, one pound per pound. For every pound pig you bring in, if you want to trade it off, 50-50. And that'll be your summer sausage. Well, the reason I like, I want this, like people start buying directly from a farmer because, you know, you got the BLM and the federal government trying to Screw the cattle rancher, and I just figure, you know, is this these meat packing plants that are trying to have a monopoly create a bottleneck so they can jack up the beef prices? And I just figure we've got to change the economic battlefield. Well, the other part about this is in advance is actually getting into running your herd with somebody else's herd, remember, brands. One of the things about that is, again, if you're looking at ranging cattle, You can have more than one brand on a range and that's something to take into consideration. If anybody rustles your cow, you take it to the full extent of the law. That's one of the things that we've been talking about here about this whole thing with the Bundy Ranch thing. There's no immunity. There's no immunity for that. That's grand theft. You're looking at charging them with grand theft. It's criminal grand theft and then criminal grand theft and criminal destruction of property. Every one of those cows is a felony. and if somebody want to take responsibility for this is the risk he when you start saying that in a conversation with the fed than anybody and they feel all of a sudden get real quiet with sunglasses on already have a lot because you see who's the responsible party for this who's in charge here is responsible party where i'm having your arrest what your name and your card You know, because that's the bottom line to this thing is we have allowed these pirates to get away with too much for too long. As it is, we're going to end up having to shoot them. I'm sorry. See, even as I say that, it sounds like, well, that would be an out. Well, no, what will happen is this. You're going to go after them and they would be prosecuted. but they're little butt buddies and I'll have their panties all little blue lines slash their fellow travelers slash the fellow cops oh oh you went after that BLM guy he's a brother officer oh so you condone the cattle ranch stealing you know the cattle the cattle uh cattle rustlers well he's a brother officer so you're just as much of a criminal as he is see that's what gets me about this with the whole scenario is that they're they're they're involved in high felony criminal action here they were they didn't just steal i mean they just they just literally killed with reckless abandon and that is enough going to court with with any of their defense mark i thought i would it's on the books in the uh... data taxes hello rusling that that that penalty well yeah but that should be i think america pretty well needed met out the death penalty for a whole bunch of the global anyway We don't need to worry about too much of a court thing on that one. It's just going to come down to shooting our hind end and be done with it because there isn't anything that they're listening to. The arrogance level is as high as it was when we were dealing with a crown of England, which we are dealing with the crown of England again. I think that's the most common mistake that's made is we're dealing with the same enemy that our founding fathers dealt with. We're blue in the face. They weren't being listened to at all. The arrogance level they were so arrogant that anytime they showed up in front of you you know the soldier in fact demanded their boots to be cleaned or they demanded you to be servient slash to be a slave the police state mindset of homeland security is no different uh... we just you know again as everybody finally acknowledge it turns out the take that was in charge of the stop the the one one of the most hated individuals in in germany uh... after world war two It was here in 2000, what, 2005. He was brought in to manage Homeland Security. He was brought in behind the scenes and it's all open to public information, but that rotten piece of trash that was running the stops, he was here in the United States to the behest of these pigs in our government. It's the same Yehudi trash that are doing it here now. So we better be prepared for it. The big thing is alternate livestock too. By the way, goats, sheep. I would point out that guys, the only thing about rabbit, if you're going to be using it as a survival food or even to live off from, again we were talking about making sausage and stuff. Rabbit meat combined with pork would be a good choice and or other meats to create, you know, like a summer sausage. Nobody talks much about that because, well rabbit, it's like there's nothing wrong with rabbit, but rabbit because of the specific amino acids and other issues with regard to their metabolism and how they are built, you would start to get that all you had was rabbit for a diet. There are certain parts of their metabolism that are engineered in a particular way with regard to those amino acids and other genetic makeup that dictate that we have to have other fats and proteins in place to help break them down. It's rather interesting because rabbit is the only one who likes that on the inventory. I don't think we had to worry about it with squirrels. Mark, I might be having to shoot some rabbits because they're eating my corn stock. Well yeah, you start sending out the money. So I'll tell you what, money is die real easy. You don't have to have anything big and if you're going to shoot a rabbit, you can use a .22 caliber high powered pellet gun. You can use .22 CB caps. Don't waste a long rifle. Get yourself some shorts George. or CB caps from CCI. They're cheaper or at least the same price, but they're quieter. Your neighbors aren't going to even know you've been taking money. The other option is a blow gun. Get really good with a blow gun, you can kill rabbits all day. We have. We actually kill rats all day. Rabbits are a lot easier than a rat.
